What are safe cooking temperatures?
The internal temperatures for raw animal foods must be monitored to ensure that foods are cooked to the following temperatures:

130 Degrees Fahrenheit
  • Roasts (for 112 minutes)
145 degrees Fahrenheit
  • Fish
  • Meat
  • Pork
155 Degrees Fahrenheit
  • Ground meat/fish
  • Injected meats
  • Pooled raw shell eggs
165 Degrees Fahrenheit
  • Poultry
  • Stuffed fish, meat and pasta
  • Stuffing with fish/meat
